Having grown up on a farm in rural Virginia, Chef Ziehm came to understand the beauty and importance of a farm to table, sustainable life style at a very early age. Those lessons, learned on the farm, resonate today, in his cooking, and his dedication to a farm, water, and forest, to table lifestyle.
Chef Ziehm, has traveled the world, from South Africa, Europe, Central America, and Mexico studying alternative cultures and their cuisines. During his travels he has cooked in small cantinas in Mexico, and 3 Star Michelin restaurants, in Europe, and everything between, with one goal in mind, that ofmastering his trade. His culinary expeditions, and dedication to excellence, has propelled him to one of the top chefs in his class.
Chef Ziehm's eponymous restaurant in Park City, Utah received critical acclaim for its groundbreaking cuisine, and its exceptional service, garnering 4 stars from the Salt Lake Tribune, and was touted by Salt Lake Magazine, as a chef, and restaurant, that was "changing the palette of Utah".
Chef Ziehm's second restaurant, in Chicago's, affluent, Lincoln Park, Neighborhood, Ena, was an instant success. Earning 3 stars from the Chicago Tribune, top new restaurant, from Chicago Magazine, 4 stars from The Big Review, and a Top Chicago Restaurant honor from the Kaplan Radio Show, placed Chef Ziehm as one of the best chefs, in the highly contentious, food destination, of Chicago. Chef Ziehm continued his rise through the top Chef ranks, as a corporate chef for Lettuce Entertain You Enterprises, opening the award winning, Petetrinos Restaurant, in Chicagos, famed, theater district.
Having cooked with such culinary icons, as John Joho, Joachim Splichal, and Emily Moore, Chef Ziehm has created his own cuisine, based on farm, water, and forest, to table ingredients. He takes a minimalistic approach, highlighting the most pristine ingredients, with a highly artistic presentation.
After returning to his southeastern roots, in the Appalachian foothill town of Lenoir North Carolina, Chef Ziehm has partnered with local visionary, Amanda Corriher Ingle, at The Bella Torte Bistro. Together, they have set about the task of turning the beautiful, small town of Lenoir, into a nationally recognized culinary destination.
